The taste of Garrigue
The Garrigue is a kind of forest on limestone soils, in Southern France around the Mediterranean Basin,
near the seacoast, where the moderated Mediterranean climate provides annual summer drought.
In “Les Corbières”, Vines and Garrigue have grown together for thousands of years.
Rich in aromatic oils, flowers, and leaf litter that leach into the soils,
the Garrigue gives the grapes similar aromatic nuances.

Winemaking’s secrets
The winemaking secrets of Croix de Sainte Hanne
Hand-picked. The Carignan is vinified in carbonic maceration during 30 days.
Partial maturing in oak barrel during 12 months.

What is a carbonic maceration?
It is a winemaking technique that exploits the grapes' natural self-fermentation capacity, without the intervention of yeasts. It takes manual harvesting. The grapes should be intact and not trampled.
Uncrushed whole grain vats must be placed anaerobically (absence of air) but saturated with CO2 (carbon dioxide). This CO2 supply must be maintained from 24 hours to 48 hours after vatting.
This maceration can only be done in very small volumes so that the wine does not crash.
This process is ideal for the production of supple and aromatic red wines.

Every JinGarrigue’s wine tells us a story

Croix de Sainte Hanne is truly a wine of sun and tradition.
The name of the wine, Croix de Sainte Hanne, is linked to its major grape variety,
the Carignan, a rare, very old Carignan, over 60 years old.

The Carignan should be harvested when it has reached perfect maturity, neither too early nor too late.
Therefore, it is very important that the weather remains good until the end.

That is why, every year, every August 11, the inhabitants of Lézignan Corbières pray together.
They go in procession, at the edge of the Garrigue, to the Sainte Hanne cross (Croix de Sainte Hanne).
This is the one you see drawn on the label of the bottle.

The people of Lézignan Corbières ask Sainte Hanne
for rain before the grape harvests and for the crop protection.

Croix de Sainte Hanne is the guardian of the successful harvest.
